it takes a bit of time but you learn to spot the changes in how people fly when they have had special damages.
for example if they have lost the special maneuvers ability then you will notice that they havent used it in situations where it would be the most logical choice.
similarly when they have tail damage and consistently move into your arc of fire rather than escaping.
other things also show up - but it is a bit of reading their play and a bit of guess work!
some of the other effects you can actually see if you look for them. such as having lost a gun, the plane chart will be adjusted to show 1 less gun. if the observer in a 2 seater is dead then again the plane chart will tell you.
other stuff like jams and observer injured can only be worked out from looking at damage calculation. basically if someone had a shot and the computer awarded 0 points for it they are jammed! so watch for their movement - they have to do straights to unjam..... predictable movements
