That's, IMVHO, the common mistake of step #2 (see my post above).
The Gerries should not stay, they should attack and shoot down those poor suckers.
If they can't, they've lost. 2-seaters will follow shortly and the day wil be lost for Central Powers.
The purpose of everything was air superiority: control of the skies. Period.
Historically, Gerries were always outnumbered (3 to 1 at least), but had better planes and even better pilots. That kept the "game" running.
We're used to play with Snipes and SE's, but DXIIIs, Ni28s and Camels were as common as SE5s, and Snipes were very very rare to be seen.
The trick is stop thinking about Blue Max as an abstract game (like chess): it's a simulation game. So, to make things even, stop peppering SE's and Snipes everywhere, start simply following history: give Allies their real planes, and let holding the field be their problem.
As for the rest of the post (honour), I do agree. Being outnumbered by, say, 3:1 should be enough to deserve an "honourable" exit. They were supposed to fight, not commit suicide. 
P.S. I understand that my attention to "hard" simulation is not necessarily shared by everybody, still I think that such a (maybe optional) scoring system is worth trying.
