i was thinking about some 25 pilots playing 24 matches with each of the others in reverse (with both planes) in 3 type of scenarios : that makes it 24 x 2 x 3 = 144 matches for each player.
is it too much to play and to manage?

maybe two scenarios are enough? i was thinking: one dancer vs dancer one runner vs runner one runner vs dancer
It is not the scneario but the league type tournament with 25 teams... You are running a games like NBA...
The fastest tournament I have completed involved 16 pilots, divided in 4 groups. Running 4 matches in each group. The top players running another 4 matches. It completed in 3 months with good feedback. But it already makes me a bit tired of updating 16 matches. so 144 x 24 =3456...
May be it is too old for a 30s man to run a tournament like this. But if I were u I would think twice or even 3 times of a matches like this.
May be 4 players first 4 x 2 x 3 = 24 is a good start. 24 x3 = 72 matches. Oh my god. You definitely requires the players to report the game results themselves.
