I know a little about CGI and I can't believe they would set up the animation sequences and then speed everything up. You have to remember that two biplanes approaching each other head on are going to go past each other at over 200mph. From fifty feet away that is going to seem pretty fast. I would bet that the planes are programed to fly exactly like the originals. I will check with a few friends and report back.
