The problem with long burst is that you run the risk of jamming your guns (being unable to fire) and then having to fly only straight manuvers in an attempt to clear the jam. Of course you don't have to fly straight, but that is the only way to clear the jam.
There have been plenty of times when I wished I had left my guns set to medium but there are few times when I knew the long burst made all the difference.
