It's not very "chivalric", but belongs to the pool of dirty tricks, along with faking to be gliding!!!
Say what? Dirty tricks? These are the skills of an ace pilot. Just like stalling and rolling lucky is the skill of a neophyte pilot

Now, as to running out of fuel far from your own border - people are thinking it is chivalrous to allow this mistake to go unpunished? How will they learn if they do not pay for their mistakes?
As well, the board edge is artificial. If you can't hunt me down within the confines of the board, then I will duck into this strategically placed cloud bank (the board edge) and hide from you.
When the gauntlet is thrown - the risk is a "fake" death. Both pilots know this when they enter the arena.
Sure, it can be honourable to let a pilot escape - but only those that have earned your respect.
